French Fries (Sides / Snacks)

Recipe:

1. Preheat oven to 375 degrees F
2. Heat oil in a small pot on the stove (medium/medium-high heat)
3. Slice potatoes into french-fry shapes.  Thinner fries will be crispier.
4. Pat potatoes dry with paper towel
5. Fry potatoes until golden brown
6. Place potatoes on paper towel (to absorb excess oil) on a cookie sheet and place in the oven for 5-10 minutes (very rough timing) - this is also a good time to fry a second batch.
7. Re-fry potatoes for a few minutes, until color darkens further.  They will get quite crispy at this stage.
8. Place on a paper towel on a plate.
9. Add kosher salt
10. Enjoy with ketchup (or mix of two parts ketchup, one part mayo?)
