Rolled Pork Loin (from Taranta) (Dinners)
Dairy- Cheese (Parmesan) (need some, have some)
- Pork Loin (need some, have none)
- Spinach (need some, have none)
- Lime (need 1, have 5)
- Black Pepper (need some, have some)
- Salt (need some, have some)
Recipe:
1. Cut pork loin into 6-8" long segments. 2. Flatten pork by cutting with knife parallel to the ground, ~3/8" from bottom, unrolling when getting near the end to expose the next cut. *(Ideally the fattiest part will lay on top at the end, so it's best to start the cut with the fat on the bottom.) 3. Rub in lime juice from 0.5 lime 4. Generously sprinkle kosher salt and pepper (ground medium/large) 5. Sprinkle parmesan 6. Add spinach 7. Sprinkle more parmesan 8. Roll the pork loin up again 9. Tie it up with twine 10. Generously sprinkle outside with kosher salt, pepper 11. Sear the exposed sides (optional) 12. Roast until 140°F, then let sit for 5-10 minutes. 13. Cut and remove twine, then slice to serve, exposing spiral.
