Empanada Filling: Spicy Chicken (Dinners)
Canned Food- Tomato Paste (need some, have 2)
- Hot Sauce (need some, have some)
- Chicken Breast (need 1, have 5)
- Garlic (Fresh) (need some, have 16)
- Onion (need some, have 2)
- Paprika (need some, have some)
- Adobo Seasoning (need some, have none)
- Cayenne Pepper (need some, have some)
- Chili Powder (need some, have some)
- Oregano (need some, have some)
Recipe:
½-1 lb. chicken (breast or thigh) 1 tbsp or less tomato paste (optional) 2-3 cloves fresh garlic ¼-½ sweet onion Hot sauce (cheap; you'll use a lot) 1. Cook chicken until fully (or just about fully) cooked. Baking is fine, pan-searing thighs works well, etc. 2. Pan fry onion until translucent or browning 3. Mince garlic and add to pan; cook until fragrant or lightly toasted 4. Add cooked chicken to pan along with ⅓+ cup water and small amount (¼ can or less) tomato paste 5. Add plenty of hot sauce (think ⅛-¼ cup; I usually use Frank's) 6. Add dry seasonings to taste: * good amount of paprika * small amount of adobo seasoning (remember: this is effectively salt) * small/mid amount of chili pepper * small/mid amount of cayenne (optional) * small amount of oregano (optional) 7. Stir under med/low heat to allow tomato paste to melt into the water 8. Reduce until desired texture
